Yields: 8tn/ha.

Harvest dates: 15-30 August.

Vinification: Manual harvesting in 20 Kg picking baskets. Mechanical destemming. Alcoholic fermentation and extraction in stainless steel tanks with controlled temperature 24°C for 21 days, full malolactic fermentation and ageing in new French oak barriques 225lt for 15 months. The wine is bottled unfiltered and matures for at least 12 months in our cellar room.

Organoleptic Analysis: Intense violet colour with brownish tints, lovely balance of mature black fruit, spices and burned wood hints.

Harmony of flavours: Enjoy it with fine wild game dishes and red spiced meat. Served at 16-18°C.

Alcohol by volume: 13.5%

*TIPS: It is suggested to open this wine using a two-pronged cork extractor, also known as a butler’s thief and then carefully pour the wine into a decanter through a funnel with some kind of filter.
