PET NAT ROSÉ (Limited Production)

The Petillant-Naturel or Methode Ancestrale method comes from France and it is the oldest method for the production of sparkling wine. The wines produced by this method are called Petillant Naturel or "Pet-Nat". The resulting wine is usually cloudy and unfiltered and it’s bottled with a "crown" cap.

Origin of Vineyards: Collaborating vineyards in Asprokampos area of ​​Nemea

Age of vines (average): 40 years

Yields: 600 Kg/ha (6tn/ha)

Harvest dates: First fortnight of October

Vinification: Obstruction and pre-fermentation extraction at 8 ° C for 4-6 hours. All other procedures follow the stages of white wine vinification. The wine is bottled before the main fermentation is completed, without the addition of secondary yeasts or sugars. The fermentation continues in the bottle creating carbon dioxide (CO2) and forms tiny natural bubbles. The disgorging process is done manually. The presence of a small amount of sediment is normal.

Organoleptic Analysis: Slightly cloudy, refreshing and fruity, with soft pomegranate color and delicate bubbles.

Harmony of flavors: Enjoy it as an aperitif or accompany it with dishes based on fresh tomatoes, such as pasta and pizza. Served at 8-10 ° C.
