PET NAT SAVATIANO NO ADDED SULFITES (Limited Production)

The Petillant-Naturel or Methode Ancestrale method comes from France and it is the oldest method for the production of sparkling wine. The wines produced by this method are called Petillant Naturel or "Pet-Nat". The resulting wine is cloudy and unfiltered and it’s bottled with a "crown" cap.

Age of vines (average): 30 years

Yields: 600 Kg/ha (6tn/ha)

Harvest dates: First fortnight of September

Vinification:  Manual harvesting in 20 Kg picking baskets. Mechanical destemming, skin-contact at 10°C for 8 hours, light pressure, static debourbage, alcoholic fermentation in stainless steel tanks at 16°C. The wine is bottled before the main fermentation is completed, without the addition of secondary yeasts or sugars. The fermentation continues in the bottle creating carbon dioxide (CO2) and forms tiny natural bubbles. The disgorging process is done manually. The presence of a small amount of sediment is normal. No added sulfites.

Organoleptic Analysis: Slightly cloudy, golden hue with greenish highlights. Spicy with refreshing acidity and delicate bubbles.

Harmony of flavors: Enjoy it as an aperitif or accompany it with a wide range of dishes, from risotto with truffle to scallops with fresh lemon. Served at 8-10 ° C.
